Perfect Pancakes | 3 Ways


This year, Pancake Day is taking place on Tuesday 28th February. I'm really looking forward to it as it will be the first year that Darcy will be able to enjoy it and hopefully toss a pancake or two. I'm sure it will be a very messy affair.

Today I'm not only sharing with you the perfect pancake batter recipe but three of my favourite fillings if you fancy something a little different from lemon and sugar.

Ingredients
  • 250g Plain Flour
  • 1/4 Teaspoon of salt  
  • 2 Large eggs
  • 500ml Milk of your choice

Method
  • Sift the flour and salt into a mixing bowl
  • Make a hole in the middle of the mixture and break the eggs into the bowl
    Pour in half of the milk and whisk away
    Add the remaining milk and whisk until the batter is smooth
  • Heat a pan and a small knob of butter making sure it covers all the pan
    ladle the pancake batter into the pan, spread the mixture out evenly
    cook for 1 minute until golden, toss or use a palette knife to flip over the pancake and cook for another minute 
  • Top pancakes with toppings of your choice




Nutella & Berries Topping - Per Pancake
  • 2 tablespoons Nutella
  • Handful of berries of your choice
  • Handful of Almonds



Strawberries & Cream Topping - Per Pancake
  • 6 tablespoons crème fraîche
  • 1 teaspoons icing sugar
  • 1 teaspoons vanilla essence
  • 3 teaspoons strawberry jam
  • Handful of sliced strawberries

Lemon meringue Topping - Per Pancake
  • 6 tablespoons crème fraîche
  •  1 teaspoons icing sugar
  • 1 teaspoons vanilla extract
  • 3 tablespoons lemon curd
  • Half a meringue ring (crushed)
