Every morning I take a piece of fruit from the bowl, but kept avoiding the bunch of bananas as day by day they ripened.This morning I was about to throw them away and I decided I
should try and make something with them. So I threw a few ingredients in a bowl
and voila yummy banana pancakes were made. I used my flat mate and boyfriend as guinea pigs and they
loved them, so did I!
Ingredients
1 Banana, mashed plus extra for the topping
1 Egg
200ml Almond Milk ( you can use any type)
30g Melted Butter
125g Plain Flour
1 tsp baking powder
Spray Oil
Cinnamon (optional)
Sift the flour and baking powder into a bowl, in a separate
bowl mash one banana. Crack the egg into the dry mixture and mix till almost
combined then add the banana along with the milk until it looks like batter
then add the melted butter.
Heat the pan and add the oil. Take a scoop of batter into
the pan. Once the batter starts to bubble u, flip them over. After 30 seconds
place on a plate, repeat this process till all the batter is finished.
Serve with either honey or maple syrup and topped with slice
bananas.
Best thing about these pancakes that they can be frozen, so
cook in batch and take them out when needed.
