1. Overnight Oats
I was introduce to Overnight Oats when I joined Slimming World. It's one of my favourite easiest breakfasts to have. It's especially good if you're on the go
Ingredients
35g Porridge Oats
1 Pot of yogurt (125g)
Mixed fruits (I use frozen fruit as it melts into the oats and makes it extra gooey)
Method
Layer the porridge, yogurt and fruit into a jar or bowl, cover and leave in the fridge overnight
In the morning stir, add some extra fruit and enjoy
2. Carrot Cake Porridge
A great way to get some vegs into your diet, super filling and yummy
Ingredients
35g Porridge Oats
150g Milk (add more if you like your porridge runny)
1 small grated carrot
1 tsp Mixed Spice
1 tsp Vanilla Essence
Sweeten to taste (sugar,sweetner,honey etc)
Method
Place all the ingredients into a pan bring to boil, then simmer for 5 - 10 minutes until thick and creamy
3. Baked Oats
A versatile way of serving porridge for children and adults who do not like the gooey texture
Ingredients
35g Porridge Oats
1 egg
50 ml milk
Add fruit, flavouring, jam whatever you fancy
sweeten to taste
Method
Mixed together in a bowl
Spoon into muffin/cake case
Bake at 180 -200 or until golden
Enjoy straight out of the oven
4. Chocolate Porridge
When you're after a cheeky little treat
Ingredients
35g Porridge Oats
150g Milk (add more if you like your porridge runny)
1 tsp Cocoa Powder
Sweeten to taste (Honey,sugar,sweetner)
Pinch of cinnamon
5. Porridge Pancakes
Lovely start to the weekend, especially as Sunday Brunch
Ingredients
35g Porridge
1 Egg
2 Tbsp Sweetner
Vanilla Essence to taste
Fry Light (coconut oil, vegetable oil etc)
Method
Mixed all the ingredients in a bowl
Heat up a frying pan add a little cooking oil
Spoon pancake mixture into the pan, wait a minute then flip over
plate up and serve with whatever you like.

I love porridge its hands down my favourite breakfast I love it with berries and also overnight oats or as pancakes. I've never had carrot porridge or baked oats will have to try it out.

ReplyDeleteI didn't know it was breakfast week! I better start getting more creative with my breakfasts then as I just had toast and decaf tea lol!
