Fragrant Chicken Curry: A Flavourful Delight

Ingredients:

  • 500g chicken breast or thigh fillets, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 1 cup coconut milk
  • Salt, to taste
  • Fresh cilantro leaves, chopped (for garnish)
  • Cooked rice or naan bread, to serve

Instructions:

  1. Heat the vegetable oil in a large skillet or frying pan over medium heat. Add the cumin seeds and toast them for about 30 seconds until fragrant.
  2. Add the chopped onion to the skillet and sauté until softened and translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, and cook for another 2 minutes until aromatic.
  4. Add the chopped tomatoes and tomato paste to the skillet, and cook until the tomatoes break down and release their juices, about 5-7 minutes.
  5. Sprinkle in the ground turmeric, ground cumin, ground coriander, paprika, chili powder, and garam masala. Stir well to combine and cook for another 2 minutes to toast the spices.
  6. Add the bite-sized chicken pieces to the skillet and stir to coat them in the spice mixture. Cook for about 5 minutes until the chicken is lightly browned on all sides.
  7. Pour in the coconut milk, stirring to combine with the chicken and spice mixture. Bring the curry to a gentle simmer, then reduce the heat to low and cover the skillet with a lid. Let the curry simmer gently for about 20 minutes, stirring occasionally, until the chicken is cooked through and tender.
  8. Taste the curry and adjust the seasoning with salt, if necessary.
  9. Once the chicken is cooked and the curry has thickened slightly, remove the skillet from the heat.
  10. Serve the fragrant chicken curry hot, garnished with chopped cilantro leaves, alongside steamed rice or warm naan bread.
